Thus, Rancho Margot was born, a place that is characterized by the fact that both guests and staff can eat what they harvest and enjoy the heat and electricity produced on the spot, based on renewable resources. According to Sostheim, the amount of supplies brought from outside is minimal and they increasingly seek to lower it. In the place they produce dairy products, meats and vegetables. This allows the initiative to contribute to the environment and cause the least possible impact on the area. “Here all the energy is produced through water turbines, the gas for cooking is generated in biodigesters and hot water is obtained from furnaces with compost," said the owner. Sustainability is also an attraction for tourists, who even participate in the specific work of the production of input materials, such as picking vegetables or working with cows. "Tourists are excited, because we can use all livestock waste productively without causing odor or flies," said the owner.
